Why Soba?

At Jojosoba, we're passionate about bringing the authentic taste and health benefits of buckwheat soba to our community. But why soba, you might ask?

SOBA

Soba isn't just delicious; it's a nutritional powerhouse. Buckwheat, the main ingredient in our soba, is packed with fiber, antioxidants, and essential minerals. It's naturally gluten-free and has a low glycemic index, making it a great choice for everyone, including those with gluten sensitivities or those managing their blood sugar levels.

Buckwheat: Not Your Average Grain

Here's a fun fact: buckwheat isn't actually a grain at all! It's a seed that's used like a grain, making it a "pseudocereal." This unique plant has been cultivated for thousands of years, with evidence of its use dating back to 6000 BCE in Southeast Asia.

Buckwheat

At Jojosoba, we celebrate this ancient food by crafting our noodles from 100% buckwheat flour, unlike many commercial soba noodles that mix in wheat flour. We believe in preserving the traditional methods and flavors that have made soba a beloved dish for centuries.

Our Mission: Promoting Regenerative Business

We're not just here to serve great food; we're on a mission to promote regenerative business practices that benefit our environment, strengthen our community, and improve your health.

  • Environment: By sourcing our buckwheat from local, sustainable farms, we're supporting eco-friendly agricultural practices that improve soil health and biodiversity.

Our Unique Approach

At Jojosoba, we do things a little differently. We mill our own buckwheat flour in-house, craft our noodles by hand, and even ferment our own sauces. Why go through all this trouble?

"We want consumers to rediscover the value of simple foods that anyone can make at home, using ingredients that come directly from farmers. We're reducing the steps of industrial processing. Milling flour, kneading it, cutting it into noodles, boiling them, and eating them as a meal is something that every household used to do without needing a master chef with 50 years of experience or any special qualifications."

This approach not only results in fresher, more flavorful dishes, but it also connects us more closely to our food and its origins.
